True to its name, 'Pure' is vinified and bottled with absolutely no added sulfur dioxide, representing the rawest, most unadulterated expression of the estate's terroir. Utilizing ancient Burgundian methods, the grapes undergo 100% whole-cluster fermentation with native yeasts in open wooden vats, followed by aging in oak barrels without racking. The resulting wine is highly energetic, wild, and deeply aromatic, offering a sensory journey into the pre-industrial heritage of Burgundy.
