Hailing from the legendary Kaseler Nies'chen vineyard in the cool Ruwer valley, this rare Eiswein is a testament to extreme viticulture and natural alchemy. The vineyard's steep, south-facing slopes of weathered blue Devonian slate impart a distinctive, fine-veined minerality and electric acidity to the Riesling grapes. To craft this liquid gold, healthy grapes are left on the vine into the depths of winter, risking loss to birds and weather, until temperatures plunge to at least -7 degrees Celsius. Harvested by hand in the freezing pre-dawn hours and pressed while still frozen, only the highly concentrated, sugary nectar is extracted, leaving the water behind as ice. The resulting wine is a breathtaking balance of luscious sweetness and piercing, vibrant acidity, showcasing notes of candied citrus, honeyed stone fruits, and a crystalline mineral finish.
