Established in 1724, the House of Rémy Martin has long been synonymous with the prestigious Fine Champagne designation, a protected appellation requiring a blend of eaux-de-vie exclusively from the Grande Champagne and Petite Champagne crus, with at least 50% from Grande Champagne. The Fine Champagne Mature Cask Finish VSOP is a modern evolution of the house's historic 1927 VSOP creation. Crafted predominantly from Ugni Blanc grapes grown in chalk-rich soils, the spirit undergoes traditional double distillation on the lees in small copper stills. It is aged in Limousin oak casks and finished for an additional year in mature, twenty-year-old oak barrels, imparting a remarkably smooth texture, vibrant notes of ripe apricot and peach, and a delicate touch of vanilla and wildflowers.
