✨ Technical Specifications
Crafted from Piedmontese red grape varieties grown in calcareous-clay marl soils, this rosé is produced using brief skin maceration followed by gentle pressing. Fermentation is conducted in temperature-controlled stainless steel tanks to preserve primary fruit brightness and delicate aromatics, bypassing malolactic fermentation and oak maturation to maintain crispness and tension.
🍾 About the Producer
Established in 1820 when Giuseppe Sarotto relocated from Barbaresco to Neviglie, Sarotto s.r.l. represents a long-standing Piedmontese winemaking heritage reinvigorated by Roberto Sarotto upon completing his enological studies in 1984. Spanning approximately 90 hectares across prime sub-regions including Neviglie, Barolo, Neive, Mango, and Gavi, the estate benefits from calcareous-clay marls, sun-drenched hillsides, and the cool continental influences of the Langhe. Roberto, alongside his wife Aurora, champions sustainable, low-intervention viticulture that balances historical tradition with contemporary enological precision. The diverse cellar work pairs stainless steel temperature control with traditional cask and barrique maturation, famously housing a record-setting 478-hectoliter oak barrel. Benchmark bottlings range from single-cru Barolo and Barbaresco to expressive Langhe Arneis, Gavi del Comune di Gavi, and vibrant aromatic interpretations like the Challis Bianco and Rosato.
