Inspired by the legendary Amarone wines of Valpolicella, Scheid employs the ancient appassimento technique, where a portion of the estate-grown Cabernet Sauvignon grapes are carefully dried after harvest. This process dehydrates the berries, concentrating the sugars, acids, and phenolics to produce a wine of extraordinary depth, richness, and complexity. Grown in the wind-swept, sun-drenched vineyards of the Salinas Valley, the grapes benefit from extended hang time before undergoing this meticulous drying process. The resulting wine is remarkably robust, boasting intense aromas of dark fig, blackberry compote, cocoa, and sweet tobacco, framed by velvety tannins and a luxurious, lingering finish.
