✨ Technical Specifications

Crafted by the esteemed pioneering team at Scotchmans Hill, 'The Hill' Cabernet Sauvignon represents a thoughtful regional exploration. While the estate is famous for its cool-climate maritime vineyards on Victoria's Bellarine Peninsula, they look to the warmer, sun-drenched terroirs of South Australia to source the premium fruit required for this classic Cabernet. This approach allows winemakers to capture the rich, bold, and structured character of South Australian Cabernet Sauvignon—marked by dark plum, cassis, and subtle mint notes—while applying their signature cool-climate sensibilities to maintain balance, elegance, and fine-grained tannin structure during maturation in French oak.

🍾 About the Producer

Established in 1982 by David and Catherine Browne, Scotchmans Hill is a pioneering producer on the maritime Bellarine Peninsula within Victoria's acclaimed Geelong wine region. Planted on rich, volcanic basalt soils and moderated by maritime breezes from Port Phillip Bay and Bass Strait, the estate benefits from a dry, cool maritime microclimate. Guided by long-tenured chief winemaker Robin Brockett, the winery focuses on minimal intervention and precision viticulture to reflect authentic regional terroir. Scotchmans Hill is renowned for its estate-grown, elegant Pinot Noir, complex Chardonnay, cool-climate Shiraz, and its prestige Cornelius single-vineyard collection.
