Hailing from the steep, slate-laden slopes of the Mosel, Selbach-Oster's Graacher Domprobst Riesling Auslese 1* is a masterclass in tension, sweetness, and mineral depth. The Graacher Domprobst vineyard, historically named after the Cathedral Provost of Trier, features deep, moisture-retaining blue Devonian slate soils that yield wines of exceptional structure and longevity. Crafted from 100% Riesling, this Auslese is made from meticulously hand-harvested, highly ripe grapes, often touched by noble rot, designated by the single star (1*) to denote its superior elegance and refined concentration. Fermented naturally with wild yeasts in traditional large oak Fuder casks, the wine balances luscious stone fruit sweetness with a piercing, vibrant acidity and a signature smoky, flinty minerality that defines this legendary terroir.
