The Graacher Domprobst vineyard, named after the cathedral provost who historically collected tithes from this prized site, is renowned for its steep, blue Devonian slate slopes and exceptional water-retaining clay veins. This Beerenauslese from Selbach-Oster is a rare, sweet masterpiece crafted only in exceptional vintages. It is made from 100% Riesling grapes meticulously selected berry-by-berry as they shrivel under the influence of noble rot (botrytis). Fermented slowly using indigenous yeasts, the wine captures the essence of its terroir, balancing opulent, honeyed sweetness with a piercing, mineral-driven acidity.
