The Graacher Domprobst vineyard is one of the Mosel's most revered grand cru sites, historically named after the Cathedral Provost (Domprobst) of Trier who once held the rights to its exceptional yields. Situated on incredibly steep slopes, this vineyard is defined by its deep, water-retaining blue Devonian slate soils, which provide the vines with consistent nourishment even in dry vintages. Selbach-Oster's expression of this terroir in their Riesling Sp$tlese is a masterclass in balance. Crafted using traditional methods, including fermentation with indigenous yeasts in large, neutral oak Fuder casks, this wine captures the essence of the site.
