The terroir benefits from cooling ocean breezes, preserving high natural acidity and intense aromatic profiles. Vinification typically involves skin contact prior to fermentation, followed by extended lees contact in stainless steel tanks—and occasionally a small portion in neutral French oak barrels—to enhance mouthfeel, complexity, and structural depth while maintaining the grape's signature crispness.

Established in 1692 along the banks of the Eerste River in Stellenbosch, Spier is one of South Africa's oldest wine farms.
