The name 'Capitel' pays homage to the traditional stone shrines that dot the local landscape. Made primarily from Corvina, Corvinone, and Rondinella grapes, the fruit undergoes 'appassimento'—drying on racks for several months to concentrate sugars and flavors before a slow fermentation and aging in Slavonian oak.
