✨ wine.spec_sheet

Hailing from the historic Tedeschi estate in the heart of Valpolicella, this exceptional grappa is distilled from the precious pomace of the single-vineyard Capitel Monte Olmi Amarone della Valpolicella. The Tedeschi family, with a winemaking heritage spanning nearly four centuries, utilizes the residual skins of Corvina, Corvinone, and Rondinella grapes that have undergone the traditional appassimento air-drying process. This concentration of sugars and aromatic compounds yields a pomace of extraordinary richness. Distilled using artisanal copper alembics, the resulting spirit captures the very essence of the Monte Olmi terroir—offering intense aromas of dried cherries, raisins, cocoa, and warm spices, wrapped in a velvety, robust structure that reflects the warmth and history of the Veneto region.
