The name pays homage to the 'capitelli'—historic wayside shrines dedicated to Saint Roch (San Rocco) that dot the Valpolicella hillsides to bless and protect the vineyards. This wine is produced using the time-honored Ripasso technique, where a young, fresh Valpolicella wine is refermented on the warm, sugar-rich grape skins left over from the production of Amarone. This secondary fermentation infuses the classic blend of Corvina, Corvinone, and Rondinella with remarkable depth, velvety tannins, and complex aromas of dark cherry, wild berries, and sweet spices, beautifully reflecting the clay and limestone soils of the region.
