The Pecorino grape has a whimsical history deeply intertwined with the pastoral traditions of central Italy. Its name is derived from 'pecora', the Italian word for sheep, a nod to the nomadic sheep herders who drove their flocks through the vineyards of Abruzzo, where the sheep would eagerly graze on the sweet, early-ripening grapes. Once nearly forgotten and facing extinction in the mid-20th century, this resilient variety was rescued by passionate local vintners. Tenuta Ulisse crafts this expressive white wine utilizing their signature ultra-cold vinification techniques. Immediately after harvest, the grapes are cooled in a specialized tunnel using liquid nitrogen to prevent oxidation, locking in the vibrant, pristine aromas of tropical fruit, white peach, and wild sage. The wine is fermented and aged in stainless steel tanks to preserve its crisp acidity, mineral backbone, and pure varietal character.
