Trimbach's Riesling Cuvée M is a rare and prestigious expression that pays homage to the exceptional terroir of the Mandelberg Grand Cru—the 'Hill of Almond Trees'—located in the commune of Mittelwihr. According to local lore, the climate here is so exceptionally warm and sheltered that the almond trees on the hill are the first to blossom in Alsace each spring. Crafted from old-vine Riesling grown on rich limestone and clay soils, this cuvée embodies the classic Trimbach philosophy: bone-dry, intensely structured, and remarkably pure. The grapes are gently pressed, fermented in temperature-controlled stainless steel and neutral oak casks, and systematically blocked from undergoing malolactic fermentation to preserve their vibrant, electric acidity and crystalline minerality. The result is a wine of profound depth, marrying ripe citrus, white peach, and delicate floral notes with an intense, stony mineral core that reflects its unique geological heritage.
