Verget's 'Cuvée Butte' (frequently sourced from the steep, limestone-rich slopes of Vergisson in the Mâconnais) represents the pinnacle of Jean-Marie Guffens' revolutionary approach to white Burgundy. Crafted from 100% Chardonnay, this cuvée highlights the dramatic, wind-swept terroir near the famous Roche de Vergisson. Here, the high-altitude vines plant their roots deep into active limestone soils, imparting a signature flinty minerality and laser-like acidity to the wine. Verget utilizes precise, gentle pressing and ferments the juice in a combination of stainless steel and older oak barrels, avoiding heavy battonage to preserve the pristine, vibrant fruit. The result is a white Burgundy of remarkable tension, purity, and energy that punches far above its regional classification.
