Crafted by the iconoclastic Jean-Marie Guffens under the Maison Verget banner, Envers et Contre Tout (meaning 'Against All Odds') is a liquid testament to rebellious winemaking. Born from Chardonnay vines planted in the Mediterranean climate of the Vaucluse at Guffens's southern estate, Château des Tourettes, this wine deliberately defies conventional Burgundy appellation rules. Guffens set out to prove that he could produce a white wine with the tension, mineral precision, and complexity of a great Côte d'Or Burgundy in the hot south of France. Grown on high-altitude limestone plateaus that preserve crucial acidity, the grapes are vinified using Verget's signature Burgundian techniques, including fermentation and aging in oak barrels with minimal intervention. The result is a stunningly complex, rich, yet remarkably fresh Chardonnay that beautifully challenges the traditional boundaries of French terroir.

Maison Verget blev grundlagt i 1990 af den visionære belgiske vinmager Jean-Marie Guffens og hans hustru Maine Heynen i Sologny, beliggende i Mâconnais i det sydlige Bourgogne. Som en banebrydende négociant-éleveur revolutionerede huset vinproduktionen i Bourgogne med sine kompromisløse standarder for drueudvælgelse, skånsom horisontal presning samt præcis lagring på det fine bundfald med minimal brug af nyt egetræ. Verget er verdenskendt for sine rene, mineralske Chardonnay-vine fra førsteklasses terroirs i alt fra Mâconnais til Chablis og Côte d'Or, men mestrer også ekspressive Pinot Noir-vine og nytænkende fortolkninger fra det sydlige Frankrig.
