By adding the parenthesis to create 'Lieu (Inter)dit'—or 'Forbidden Place'—Guffens cheekily thumbed his nose at the rigid constraints of the appellation system. This pure Chardonnay is sourced from exceptional parcels that Guffens chose to declassify, freeing himself from bureaucratic rules to focus entirely on quality. Vinified with Verget's trademark precision, the wine undergoes gentle pressing and is aged primarily in stainless steel or concrete vats to preserve its intense mineral core, vibrant citrus notes, and crisp acidity, offering a masterclass in pure, unadulterated Burgundian Chardonnay.
