This rare nectar is only produced in exceptional vintages when autumn mists and warm afternoons allow Botrytis cinerea, or 'noble rot,' to slowly shrivel the Pinot Gris grapes, concentrating their sugars, acidity, and flavors. Hand-harvested through meticulous successive passes in the vineyard, the grapes undergo a slow fermentation and extended aging.
