The Private Bin Merlot showcases the warm, sun-drenched maritime climate of Hawke's Bay, the country's oldest wine-growing region. Grown on a mix of alluvial plains and gravelly soils, this wine captures the vibrant, fruit-forward essence of Merlot. It undergoes temperature-controlled fermentation in stainless steel to preserve its bright red fruit character, followed by aging on oak to soften its tannins and impart subtle notes of cocoa and spice.
