Hailing from the steep, amphitheater-like slopes of the Ried Sernau vineyard in Southern Styria, this single-vineyard Sauvignon Blanc is a masterclass in terroir-driven winemaking. Unlike the limestone-dominated soils of Zieregg, Sernau is characterized by gravelly, sandy, and quartz-rich soils, which impart a distinctively saline, smoky, and highly elegant mineral profile to the wine. Weingut Tement treats this site with utmost reverence, employing biodynamic farming practices and hand-harvesting the grapes at optimal ripeness. In the cellar, the juice undergoes spontaneous fermentation with native yeasts and is aged on its fine lees in large, neutral oak casks for up to 18 to 24 months. This minimal-intervention approach coaxes out a multi-layered complexity, showcasing notes of white peach, wild herbs, and crushed wet stones, backed by a vibrant, laser-like acidity.
