Nestled at the foot of Mount Tennozan where three rivers meet to create a humid, misty microclimate, Yamazaki is Japan's oldest commercial whisky distillery, founded in 1923 by Shinjiro Torii. The Yamazaki Single Malt Puncheon is a masterful exploration of wood maturation, aged exclusively in large 480-liter puncheon casks crafted from American white oak. The substantial size of these casks limits the spirit's contact with the wood, ensuring a slow, gentle maturation that preserves the delicate, vibrant character of the distillate. This process coaxes out elegant notes of green apple, ripe pear, honey, and subtle vanilla, showcasing the legendary soft water of the region—the very same water praised by historic tea master Sen no Rikyu.
