Yamazaki's location at the boundary of the Katsura, Uji, and Kizu rivers provides a unique, misty microclimate with exceptionally soft water, which is crucial for the slow, expressive maturation of the spirit. Yamazaki Distillery blev grundlagt i 1923 af Suntory-skaberen Shinjiro Torii og troner ved foden af Tennozan-bjerget i Shimamoto, Osaka, som Japans første kommercielle single malt-destilleri.
