Sourced from select vineyards across the vast South Eastern Australia zone, where warm, sun-drenched days are balanced by cool night breezes, the grapes are harvested at night to lock in their natural acidity and bright fruit flavors. In the cellar, the juice undergoes a cool fermentation in temperature-controlled stainless steel tanks, entirely avoiding oak contact to preserve the pure, zesty essence of the fruit. This style reflects the Casella family's pioneering vision of stripping away the pretension of wine, offering a crisp, easy-drinking white that captures the playful spirit of the Australian landscape.

Yellow Tail blev grundlagt i 2001 af Casella-familien under Casella Family Brands og har hjemme i Yenda i New South Wales, hvor druerne hentes på tværs af vinzonen South Eastern Australia. Brandet blev skabt af John Casella med en klar vision om at fremstille tilgængelige, ukomplicerede og ligefremme vine. Huset opnåede lynhurtigt global anerkendelse for sin livlige stil og det ikoniske logo med den gulfodede klippekænguru. Filosofien bag vinfremstillingen fokuserer på frugtdrevne, imødekommende smagsprofiler, skabt med moderne vinifikationsteknikker og en konsekvent høj kvalitet på tværs af både rød-, hvid- og rosévin.
