In the cellar, the juice undergoes a cool fermentation in temperature-controlled stainless steel tanks, entirely avoiding oak contact to preserve the pure, zesty essence of the fruit. This style reflects the Casella family's pioneering vision of stripping away the pretension of wine, offering a crisp, easy-drinking white that captures the playful spirit of the Australian landscape.

Launched in 2001 by the Casella family, [yellow tail] is produced by Casella Family Brands in Yenda, New South Wales, drawing on a winemaking heritage that began when Filippo and Maria Casella immigrated from Sicily in 1957.
