Crafted by the historic House of Albert Bichot, founded in Beaune in 1831, this 'Vieilles Vignes' (Old Vines) Chardonnay is a beautiful expression of Burgundy's signature white grape. The fruit is sourced from carefully selected plots across the region, primarily from the Cote de Beaune and Hautes-Cotes de Beaune, where the vines average between 25 and 35 years of age. These deeper-rooted old vines naturally yield smaller, more concentrated berries that capture the essence of Burgundy's diverse clay-limestone terroirs. To balance freshness with complexity, Bichot employs a dual aging approach: a portion of the wine is aged in stainless steel tanks to preserve vibrant citrus and white flower aromas, while the remainder matures in oak barrels for 8 to 12 months, imparting a subtle richness, delicate notes of toasted brioche, and a beautifully rounded texture.
