Deep in the rolling hills of Valpolicella Classico, Allegrini crafts this legendary sweet red wine, dedicated to the family's patriarch, Giovanni Allegrini. Recioto is the ancient soul of the region and the historic predecessor to Amarone; local lore tells us that Amarone was actually born from a forgotten barrel of Recioto that fermented completely dry. Made from hand-harvested Corvina Veronese, Corvinone, Rondinella, and Oseleta grapes, the fruit is dried on traditional racks during the cold winter months in the appassimento process. This concentrates the sugars, acids, and aromatics before a slow fermentation is carefully halted to preserve its luscious natural sweetness, resulting in a velvety, complex nectar of wild cherries, dark chocolate, and warm spices.
