The 2022 Cervaro della Sala is sourced from the Castello della Sala estate in Umbria, where vineyards sit at altitudes between 220 and 470 meters on calcareous clay soils rich in marine fossils. The blend is composed of approximately 90% Chardonnay and 10% Grechetto. The Chardonnay was fermented and aged on its lees in French oak barriques for about five months, undergoing complete malolactic fermentation, while the Grechetto was fermented in stainless steel. The 2022 vintage was characterized by a warm, dry summer, resulting in an early harvest that preserved the necessary acidity and structural balance.
