Crafted at the historic 14th-century Castello della Sala fortress in Umbria, Cervaro della Sala is a legendary Italian white born from the visionary collaboration between Marchese Piero Antinori and winemaker Renzo Cotarella in 1985. Seeking to create a white wine with exceptional aging potential that could rival the world's finest, they combined Chardonnay with the indigenous Umbrian variety Grechetto. The Chardonnay grapes are fermented and aged in French oak barriques on their lees, while the Grechetto is vinified in stainless steel to preserve its vibrant acidity and local character.
