Aramasa's 'Colors' series is an avant-garde exploration of Akita Prefecture's heritage sake rice varieties, brewed using traditional wooden casks (kioke) and the historic Kyokai No. 6 yeast. The 'Cosmos' expression is dedicated entirely to Kairyoshinko, a rare and temperamental sake rice first registered in Akita in 1959, celebrated for its elegant, earthy, and botanical flavor profile. The 'Direct Pump' (Jikagumi) designation refers to a highly meticulous bottling process where the sake is drawn directly from the press under pressure. This technique captures the natural carbon dioxide produced during fermentation, resulting in a pristine, delicate effervescence that enhances the sake's vibrant, wine-like acidity and mineral-driven structure.
