Hailing from one of the Jura's most revered single vineyards, 'La Mailloche' is a masterclass in terroir-driven winemaking. The vineyard's name itself evokes the grueling physical labor historically required to cultivate its soils, referencing the heavy wooden mallets ('mailloches') once used by vignerons to break up the dense, compacted yellow Triassic clay. Under Stéphane Tissot's biodynamic stewardship, this challenging soil has become the source of incredible vitality. Tissot vinifies La Mailloche in the 'ouillé' (topped-up) style, preserving the pristine, intense fruit and showcasing a profound, almost electric minerality. Fermented with indigenous yeasts and aged in oak barrels, the wine is celebrated for its signature smoky reduction, saline depth, and powerful structure that reflects the ancient clay beneath the vines.
