Crafted in the traditional method known in South Africa as M thode Cap Classique, this sparkling wine pays homage to Boschendal's deep French Huguenot roots. The grapes are sourced from cool-climate vineyards across the Western Cape, where maritime breezes and ancient soils foster slow ripening and exceptional natural acidity. Following a gentle whole-bunch pressing, the juice undergoes primary fermentation, followed by blending and a secondary fermentation in the bottle. The wine is matured on its lees for an extended period, a process that imparts a refined mousse, delicate yeasty complexity, and a creamy texture that beautifully balances the vibrant citrus and red berry notes of the classic Chardonnay and Pinot Noir blend.
