Grillo is a grape steeped in Sicilian history, once the backbone of the island's legendary Marsala wines. Cantine Nicosia's Bio Vegan Grillo represents a modern renaissance of this ancient variety, crafted with a deep respect for nature. Sourced from certified organic vineyards in Sicily, where the intense Mediterranean sun is tempered by cooling sea breezes, this wine is produced without any animal-derived fining agents, adhering to strict vegan standards. The grapes are gently pressed and fermented in temperature-controlled stainless steel tanks to preserve the grape's vibrant primary aromas. The resulting wine captures the essence of the Sicilian coast—bright, sun-drenched, and kissed by a distinct marine salinity.

Founded in 1898 by Francesco Nicosia, Cantine Nicosia is a historic family-owned winery located in Trecastagni on the eastern slopes of Mount Etna in Sicily, Italy. Today, under the stewardship of Carmelo Nicosia and his sons, the estate champions sustainable and organic viticulture across its high-altitude volcanic vineyards, particularly on the ancient Monte Gorna crater. The winery is highly renowned for its expressive Etna DOC wines crafted from indigenous varieties like Nerello Mascalese and Carricante, as well as its elegant Sosta Tre Santi Metodo Classico sparkling wines.
