Crafted on the high-altitude volcanic slopes of Mount Etna, the Sosta Tre Santi Carricante Brut is a testament to Cantine Nicosia's mastery of the Metodo Classico. The name 'Sosta Tre Santi' pays homage to the local heritage of Trecastagni, where a historic sanctuary dedicated to the three patron saints—Alfio, Filadelfo, and Cirino—stands near the vineyards. Made entirely from the indigenous Carricante grape, this sparkling wine benefits from the unique black volcanic sands of the ancient Monte Gorna crater. The vines, subjected to extreme diurnal temperature shifts, yield grapes with vibrant acidity and intense mineral tension. Following a secondary fermentation in the bottle, the wine undergoes extended lees aging, resulting in a refined perlage, delicate floral aromas, and a complex palate of citrus, green apple, and toasted brioche, all framed by a distinct volcanic salinity.

Cantine Nicosia blev grundlagt i 1898 af Francesco Nicosia på Etnas østlige skråninger og har gennem fem generationer udviklet sig til en af de fremmeste ambassadører for siciliansk vindyrkning. I dag drives vinhuset af Carmelo Nicosia sammen med sønnerne Francesco og Graziano, som i tæt samarbejde med chefønolog Maria Carella forener moderne præcision i kælderen med dybe regionale traditioner. Markerne er fordelt over øens vigtigste mikroklimaer – herunder de terrasserede skråninger med vulkansk sand og forvitret lava ved Monte Gorna nær Trecastagni i cirka 700 meters højde, samt det kalkrige terroir i Vittoria. Med certificeret økologisk dyrkning og vegansk certificerede metoder lægger Nicosia stor vægt på Siciliens oprindelige druesorter. Husets toneangivende hvidvine – lige fra enkeltdruevinene på Grillo, Inzolia og Catarratto i Generazione Mille898-serien til vulkansk Etna Bianco og de aromatiske Balanubi-aftapninger – udmærker sig ved en mineralsk nerve, saltet renhed og en udtalt, autentisk sortsidentitet.
