While the standard Yellow Chartreuse is already highly complex, the V.E.P. designation represents spirits selected for exceptionally prolonged aging in oak foudres. This extended maturation in wood tames the alcohol, allowing the herbal, floral, and honeyed elements to integrate seamlessly.
