Sourced from the sun-drenched hillsides of the Veneto region in northeastern Italy, Cooper's Hawk Prosecco celebrates the rich heritage of Italy's premier sparkling wine. The history of Prosecco is deeply intertwined with the ancient Roman grape 'Pucinum,' which evolved into the Glera grape we know today. Crafted using the traditional Charmat method in stainless steel autoclaves, this wine undergoes a secondary fermentation designed to preserve the pristine, aromatic fruit profile of the grapes. The terroir of the region—characterized by a mild microclimate and mineral-rich clay-limestone soils—imparts a signature crispness and delicate floral lift to the wine, resulting in a bright, effervescent profile filled with notes of fresh green apple, white peach, and honeysuckle.

Cooper's Hawk Winery & Restaurants blev grundlagt i 2005 af iværksætteren Tim McEnery i Orland Park, Illinois, og har siden udviklet sig til et af USA's mest omfattende vin- og gastronomikoncepter med hovedsæde i Downers Grove. Huset arbejder ud fra en nyskabende model, hvor førsteklasses druer hentes hjem fra anerkendte vinmarker i Californien, Italien, Spanien og Australien, mens selve vinifikationen, sammenstikningen og fadlagringen er samlet i Illinois. Filosofien i kælderen lægger vægt på tilgængelige, madvenlige og harmoniske vine, der er skabt til at komplementere et bredt spektrum af gastronomiske oplevelser. Cooper's Hawk er særligt anerkendt for sit store vinklubsortiment og en alsidig portefølje, anført af husets egne rødvinsblends som Camille-serien, Barrel Reserve og Old Vine Zinfandel samt klassiske enkeltdruevine og livlige mousserende vine.
