🍾 About the Producer
Domaine Louis Boillot was established in 2002 when Louis Boillot parted ways with his brother Pierre at their family estate, Domaine Lucien Boillot in Gevrey-Chambertin. Relocating to Chambolle-Musigny alongside his partner, esteemed vigneronne Ghislaine Barthod, Louis established cellars that benefit from four generations of ancestral holdings across premier terroirs in both the Côte de Beaune and Côte de Nuits. Today, Louis and his son Clément meticulously tend an extraordinary collection of old vines—frequently exceeding 50 to nearly 100 years of age—rooted in complex jurassic limestone, stony marl, and clay. Viticulture adheres strictly to organic principles and lutte raisonnée, eliminating synthetic chemicals and emphasizing rigorous ploughing. Winemaking is classical and restrained, favoring complete destemming, cool pre-fermentation macerations, gentle extractions, and minimal new oak maturation (typically under 30%). Celebrated benchmark expressions include Gevrey-Chambertin Premier Cru Cherbaudes, Gevrey-Chambertin Les Évocelles, Volnay Premier Cru Les Angles, and Pommard Premier Cru Les Croix Noires, all distinguished by seamless purity, textural elegance, and terroir transparency.
