This dramatic diurnal temperature swing allows the grapes to ripen slowly, developing rich fruit flavors while retaining vibrant natural acidity. Crafted with minimal intervention to let the terroir shine, this wine is typically fermented in stainless steel tanks to preserve its bright red fruit character, with a portion undergoing aging in oak barrels to impart subtle structure, soft tannins, and a touch of spice. Founded in 1986 by the Guilisasti family, Emiliana has grown to become the world's leading producer of organic and biodynamic wines. In the late 1990s, visionary director Rafael Guilisasti partnered with renowned consulting winemaker Álvaro Espinoza to pioneer ecological viticulture across Chile's most prestigious wine regions, including the Casablanca, Maipo, Colchagua, and Cachapoal Valleys. Guided by Demeter-certified biodynamic farming principles, Emiliana eliminates synthetic inputs in favor of natural preparations and native biodiversity to authentically reflect terroir.
