Emiliana's 'Salvaje' (meaning 'wild' in Spanish) is a pioneering natural wine crafted with no added sulfites, reflecting a deep commitment to low-intervention, organic viticulture in Chile's cool-climate Casablanca Valley within the Aconcagua region. This wine pays homage to the untamed biodiversity of the estate's vineyards, where native plants, beneficial insects, and animals thrive in a self-sustaining ecosystem. By co-fermenting dark, savory Syrah with a small touch of aromatic white Roussanne—a traditional technique borrowed from France's Northern Rhône Valley—the winemakers naturally stabilize the wine's deep color while infusing it with an unexpected, elegant floral lift. Fermented with native yeasts and bottled without preservation additives, Salvaje captures the raw, vibrant essence of its terroir.

Founded in 1986 by the Guilisasti family, Emiliana has grown to become the world's leading producer of organic and biodynamic wines. In the late 1990s, visionary director Rafael Guilisasti partnered with renowned consulting winemaker Álvaro Espinoza to pioneer ecological viticulture across Chile's most prestigious wine regions, including the Casablanca, Maipo, Colchagua, and Cachapoal Valleys.
