Part of Firriato's dedicated organic line, 'Caeles'—meaning celestial or heavenly in Latin—is a pure expression of Sicily's signature red grape, Nero d'Avola, grown under certified organic viticulture at the Borgo Guarini estate in the Trapani countryside. Here, the clay-loam soils and significant diurnal temperature variations foster a microclimate where the grapes develop intense aromatic profiles while retaining vibrant acidity. The winemaking emphasizes preserving the pristine fruit character, resulting in a wine that captures the authentic, sun-drenched spirit of Sicilian terroir with notes of dark cherries, wild blackberries, and subtle Mediterranean herbs.

Firriato blev grundlagt i 1984 af Salvatore Di Gaetano og hans hustru Vinizia Novara og regnes i dag blandt Siciliens førende vinproducenter med stor anerkendelse for deres rolle i øens vinøse renæssance. Vingården råder over bemærkelsesværdigt varierede terroirs på tværs af Sicilien – fra Trapani-landskabets solbeskinnede vinmarker og øen Favignanas maritime klima til Etnas højtbeliggende, vulkanske skråninger.
