Frédéric Cossard's Chardonnay represents a masterclass in low-intervention winemaking from the heart of Burgundy. Transitioning from a career in the dairy industry, Cossard brought an obsessive focus on cellar hygiene and bacterial control, allowing him to pioneer sulfur-free winemaking without sacrificing precision. Sourced from organically farmed vineyards rich in limestone and clay, this Chardonnay is crafted with a philosophy of absolute purity. The grapes undergo a slow, gentle pressing before fermenting spontaneously with indigenous yeasts. Eschewing new oak to prevent wood flavors from masking the fruit, Cossard coaxes out an incredibly vibrant, electric expression of the grape, characterized by intense minerality, textured depth, and a signature saline finish that speaks directly of its Burgundian heritage.

Established in 1996 by Frédéric Cossard, a pioneer of natural winemaking, Domaine de Chassorney is nestled in the historic village of Saint-Romain within Burgundy, France. Operating both his estate and an acclaimed négociant label under his own name, Cossard is celebrated for his uncompromising commitment to organic and biodynamic farming. In the cellar, he practices a strict non-interventionist philosophy, fermenting with indigenous yeasts and bottling entirely without added sulfur. This expressive approach utilizes diverse vessels, including traditional oak, concrete eggs, and Georgian qvevris, to craft remarkably pure, vibrant expressions of Pinot Noir, Chardonnay, and Ploussard.
