Transitioning from a career in the dairy industry, Cossard brought an obsessive focus on cellar hygiene and bacterial control, allowing him to pioneer sulfur-free winemaking without sacrificing precision. Sourced from organically farmed vineyards rich in limestone and clay, this Chardonnay is crafted with a philosophy of absolute purity. The grapes undergo a slow, gentle pressing before fermenting spontaneously with indigenous yeasts. Eschewing new oak to prevent wood flavors from masking the fruit, Cossard coaxes out an incredibly vibrant, electric expression of the grape, characterized by intense minerality, textured depth, and a signature saline finish that speaks directly of its Burgundian heritage.
