Hailing from the granite-rich slopes of Chiroubles, the highest and coolest of the Beaujolais Crus, 'Les en Hauts' is a testament to Frédéric Cossard's mastery of natural winemaking. The name itself, meaning 'on the heights,' pays homage to the steep, high-altitude vineyards that define this cuvée. Cossard applies his uncompromising non-interventionist philosophy to these old Gamay vines, utilizing whole-cluster fermentation with indigenous yeasts and aging without any added sulfur. This meticulous, hands-off approach coaxes an incredibly pure, energetic expression of the terroir, showcasing the vibrant, floral, and mineral-driven character that Chiroubles is celebrated for.

Founded in 1996 by Frédéric Cossard in Saint-Romain, Domaine de Chassorney and the namesake Frédéric Cossard label have emerged as touchstones of Burgundy's natural wine movement. Committed to uncompromising minimal intervention, Cossard practices organic and biodynamic viticulture, vinifying with indigenous yeasts and eschewing fining, filtration, and added sulfur. The estate is distinguished by its innovative aging vessels, balancing seasoned oak barrels with Georgian clay qvevris to preserve absolute varietal purity and terroir transparency.
