Domaine de Cigalus, nestled in the rugged landscape of the Languedoc, serves as the flagship estate for Gerard Bertrand's pioneering work in biodynamic viticulture. The Indomptable Cigalus Blanc is a Demeter-certified blend typically composed of Chardonnay, Viognier, and Sauvignon Blanc. Grown on deep, well-drained clay and limestone soils, the vines benefit from a hot Mediterranean climate tempered by cool night breezes. To craft its signature opulent style, the grapes are hand-harvested and gently pressed, with the Chardonnay and Viognier undergoing fermentation and aging in French oak barrels accompanied by regular lees stirring (bâtonnage). This meticulous process yields a wine of remarkable texture, seamlessly weaving ripe tropical fruit, white flower aromatics, and toasted brioche notes with a refreshing mineral backbone.
