The Indomptable Cigalus Blanc is a Demeter-certified blend typically composed of Chardonnay, Viognier, and Sauvignon Blanc. Grown on deep, well-drained clay and limestone soils, the vines benefit from a hot Mediterranean climate tempered by cool night breezes. To craft its signature opulent style, the grapes are hand-harvested and gently pressed, with the Chardonnay and Viognier undergoing fermentation and aging in French oak barrels accompanied by regular lees stirring (bâtonnage).
