Acquired by visionary winemaker G&rard Bertrand, this historic estate benefit from a unique microclimate where high-altitude vineyards experience dramatic diurnal temperature shifts. The Sauvageonne Blanc is a masterfully crafted blend typically composed of Grenache Blanc, Vermentino, Roussanne, and Viognier, farmed using biodynamic principles. The grapes are hand-harvested and partially fermented and aged in French oak barrels with regular lees stirring (b"tonnage). This meticulous process marries the rich, exotic fruit and floral notes of the Languedoc sun with a striking, salty minerality born from the ancient volcanic soils.
