Sourced from the legendary En Chavigne vineyard in Vergisson, this cuvée is born from Guffens' meticulous practice of 'tries successives'—making multiple passes through the vineyard during harvest. While the first pass captures the vibrant, mineral-driven acidity of the Chardonnay grapes, the 'Deuxième Vendange' (second harvest) consists of grapes left on the vine to achieve a higher state of ripeness, occasionally touched by noble rot. This technique yields a white Burgundy of astonishing richness, texture, and concentration, balanced by the intense, chalky minerality inherent to the steep limestone slopes of the Roc de Vergisson. It is a wine that challenges the traditional hierarchy of Burgundy, offering grand cru complexity from a Mâconnais terroir.
