✨ Technical Specifications
This exceptional single malt represents a historic milestone: the return of single malt distilling to Edinburgh after a century-long silence. Crafted from Golden Promise, a legendary heritage barley variety renowned for its rich, oily texture and sweet, robust flavor profile, this spirit harks back to the golden era of Scotch whisky production. The spirit was matured in a first-fill Oloroso sherry hogshead (Cask No 227), a vessel that imparts deep, luxurious notes of dried dark fruits, toasted nuts, and warm baking spices. By combining traditional Lowland distilling techniques with experimental heritage grains and premium sherry wood, Holyrood has created a deeply complex, full-bodied spirit that bridges Edinburgh's rich industrial distilling past with modern innovation.
🍾 About the Producer
Founded in 2019 by Rob and Kelly Carpenter alongside former Macallan master distiller David Robertson, Holyrood Distillery marked the historic return of single malt whisky distilling to the center of Edinburgh after nearly a century. Situated in a converted 1830s railway goods building adjacent to Holyrood Park in Scotland's Lowlands, the distillery embraces a progressive, flavor-led production philosophy. Driven by extensive experimentation with specialty and heritage barley varieties like Golden Promise, diverse brewing yeasts, and tailored cask regimens, Holyrood pushes traditional boundaries. In addition to producing nuanced, complex single malt whiskies, the craft distillery is celebrated for its distinctive artisanal gins, rums, and innovative botanical spirits.
