This exceptional single malt represents a historic milestone: the return of single malt distilling to Edinburgh after a century-long silence. Crafted at the innovative Holyrood Distillery, this expression is a tribute to Scotland's rich agricultural and distilling heritage. It features Golden Promise, a legendary heritage barley variety dominant in the 1960s and 1970s, celebrated for its rich, oily texture and sweet, robust flavor profile, despite its low agricultural yields. The spirit has been matured in a hand-selected, first-fill Oloroso sherry hogshead (Cask No 229). This intensive maturation process infuses the spirit with deep, autumnal notes of dried dark fruits, warm baking spices, and roasted nuts, completely redefining the traditionally light and grassy Lowland style into something wonderfully complex and full-bodied.
