Founded in 2019 by Rob and Kelly Carpenter alongside former Macallan master distiller David Robertson, Holyrood Distillery marked the historic return of single malt whisky distilling to the center of Edinburgh after nearly a century. Situated in a converted 1830s railway goods building adjacent to Holyrood Park in Scotland's Lowlands, the distillery embraces a progressive, flavor-led production philosophy.
