Representing a bold departure from traditional Scotch whisky conventions, this single malt spirit from Edinburgh's Holyrood Distillery highlights their pioneering work with alternative yeast strains. By utilizing Champagne yeast—historically sidelined in favor of high-yield distiller's yeast—the distillery coaxes out an remarkably vibrant, ester-rich profile defined by crisp green apple, pear, and delicate floral notes. This experimental approach pays homage to Edinburgh's rich brewing heritage, where diverse yeast cultures were once the lifeblood of the local industry. Matured in hand-selected casks, this expression showcases how yeast selection can fundamentally redefine the flavor architecture of Lowland single malt.

🍾 wine.about_producer

Established in 2019 by founders Rob Carpenter and David Robertson, Holyrood Distillery marked the historic return of single malt whisky production to the heart of Edinburgh after nearly a century. Located in a restored 180-year-old railway transit building in the Lowlands, the distillery rejects traditional production constraints in favor of a flavor-forward philosophy. Holyrood is renowned for its experimental use of heritage barley varieties like Golden Promise, specialty roasted malts, and diverse beer yeasts, creating highly complex spirits. Their signature single malt whiskies, often matured in first-fill Oloroso sherry hogsheads, showcase a rich, robust character that redefines modern Lowland distilling.
